Salads are not usually my go to meal because 1. it's not filling and 2. Quite honestly it feels like I'm eating grass with a lot of fatty ranch dressing that defeats the purpose of a healthy meal. Can improve digestive health Not only are beets rich in nitrates but they are also rich in fibers ! These fibers are called dietary fibers and are the part of the plants you consume that are not digestible. Since they are indigestible, dietary fibers travel through the stomach to the small intestine and out of your body effortlessly! So what's not to love about beets? Its delicious and filled with healthy benefits. Lets get started! Ingredients (Serves 2) 6 cups of Power Greens Mix(Spinach, arugula, baby lettuce) 4 medium size beets (1/2 pound) 2 large eggs (boiled) 1/4 cups of walnuts 1/4 cup feta cheese 1/4 cup apple slices balsamic vinegar dressing salt/pepper olive oil Instructions: step 1: preheat oven to 350 degrees step 2: Dice your beets into 1 inch cube and transfer into baking sheet, drizzle with olive oil and season with salt and pepper. bake for 30 minutes. step 2: start assembling your salad, put 3 cups of mixed greens into two bowls. step 3: once your beets are done baking, let it cool for 10 minutes before transferring to your Salad bowl. step 4: slice the boiled eggs and put on top of each salad follow by walnuts, apple slices and feta cheese. drizzle with however much dressing your desire and serve!
